This is a recipe that my son Jarrett made for us one time, and now it has become one of our favorites around here.  Today, i left the zuchinni out, cuz I did not have any!  I hope you will try this recipe, it is delicious!

INGREDIENTS:

2 large tomatoes

5 cloves of garlic

4 or 5 jalapenos

1 onion

1 lb. pork chops(cubed)

palmful of cumin

3 or 4 zuchinni(cubed)

INSTRUCTIONS:

In a saucepan, put 2(whole )tomatoes, jalapenos, and garlic in it, then cover them with water.  Let boil til jalapenos and tomatoes are soft. 

Take your blender or food processor and put the tomatoes, garlic and jalapenos in, add the chopped onion and then pour some of the liquid that you boiled them in, just enough to cover the vegies…..blend til smooth! Wah Lah, there is your sauce!!!  Set aside!

In a skillet, add a little vegetable oil, and brown the pork-chop cubes! Add the cumin, and continue cooking.  Add the zuchinni(cubed)!  continue to cook for 5 minutes or until the zuchinni is soft, then add the sauce(chile), then, reduce heat and let simmer for 20 minutes!

Depending on how hot you like it, i would experiment with how many peppers you use, but for me and my family, we like it HOT..HOT…HOT!

We usually serve it in a bowl with a hot tortilla, but today, I decided to make a tostada with all the trimmings-lettuce, onion, tomatoe, and cheese.

I like a little crunch with mine so i crush a few tortilla chips on top!
