Happy November, It has been awhile. Well the cold has hit here in Amarillo, and I made a chicken tortilla soup to get us through this cold day,and I will post that recipe in the future.

But, I did make this chicken roll up the other night with roasted green chlie gravy to dip it in…

I was just experimenting with the gravy and came up with this, and it actually is my favorite dipping gravy now.

I pounded the chicken to 1/4 inch thick and on top of that I put a whole pablano pepper (roasted) ! Then I added provolone-mozerella cheese on top of that and rolled them up and baked them in an oven at 350 degrees for about 40 minutes or until done.

In a skillet, I made the usual gravy with butter and added flour and then milk to thicken it! I had some roasted green chiles and chopped them up and added them to the gravy. I also added some sauted onions that I had sweated down to sweetness(YUM)! Let simmer for 10 minutes! Serven the chicken sliced with a bowl of gravy on the side and vegetable. Really turned out great!

Good Friday to all! Well, the last few days have been in the 50’s and rain….something we haven’t seen around these parts in a while!! It was quite nice for a change….So I said on my last post, I was waiting for a time to make some soup, well I did it yesterday!! My son stopped by to do his laundry and could not leave the stove..hahaha!
Even if he is 29, he is still that little boy with the sack of crackers in one hand and a bowl of soup in the other!!! My ole man loved it as well, so here it is my version of chicken noodle soup!!

Ingredients:
2 large chicken breast
5 cups of water(give or take a few)
1 cup of chopped onion
1 cup of chopped carrots
1 can cream of celery soup
garlic powder
pepper
1 to 2 tablespoons chicken boullion
salt
1 bag of frozen mixed vegetables or fresh vegies from you garden!
1 bag of egg noodles

Instructions:
Place the chicken breast in a pan with 5 cups of water, add chopped carrots and onions! Add chicken boullion and garlic powder and salt and pepper!! Let boil and then simmer on medium until the chicken is done! Remove the chicken and shredd or cut into small pieces, then add back to the pot! At this time I add the mixed vegies, and let everything simmer for a good hour, so that the smell permiates throughout the house…leaving everyone to dream of that first spoonful of goodness!! Then I add 1/2 bag of wide egg noodles…because I had a huge bag at the time, but just eye it…you’ll know how much noodles you want……

Happy Monday to all….I thought I would share my hot chicken legs recipe with you, so here we go!!!
Can you say…SRIRACHA???

marinade:
1 cup of ketsup
1 cup of sriracha
1/2 cup of brown sugar
fresh grated ginger-bout 2 tablespoons
minced garlic-2 tablespoons
pepper1 tablespoon
squeeze about a 1/2 cup or more from the honey bear

whisk all ingredients, and add the legs…let set for at leaast 4 hours!

Preheat oven at 375. then bake for 40 minutes or until done.
I reserve some of the marinade before adding the legs for bastin
You can also get your grill on with these hot little items hee hee!
So, is everyone ready for fall??? Personally I love spring, but as for cooking in fall, I love to make all kinds of soups, so look forward to seeing some great soup recipes from me….Until then peace out my friends!!

Ingredients:
2 chicken breast(cubed)
1 cup chopped onions
1 cup chopped carrots
2 sprigs of thyme
2 bay leaves
italian seasonings
1 can of stewed tomatoes(or a jar of prego}
1/2 box of bow-tie pasta
parmesan cheese
mozerella cheese for topping.

Instructions:
In a dutch oven, saute the chicken, when browned, remove from pan. Add the onion, carrots, thyme, bay leaves, and italian seasonings, cook til tender. Add a little water or white wine to deglaze the pan, then add tomatoes or prego…..add the chicken pieces and let simmer for an hour.

Cook the pasta as directed, then add to pan and stir…..

I served this with a dinner salad and garlic bread covered with mozerella cheese and chives.

Good Friday to everyone…..the other night, i was looking for something fast and tasty. I had some bow-tie pasta and some philly cooking creme, so I put my brain to work and came up with this recipe……my ole’ man loved it.

So here is the ingredients:
1/2 box of barilla bow-tie pasta
1 large can of chicken(white)
1/2 cup of diced onion
1/2 cup of diced bell pepper
1 small can of shitaki mushrooms
1 tub of philly garlic and herb creme
1 cup of 5-cheese italian(shredded)
olive oil for saute’ ing

In a skillet, heat olive oil and add the onion and pepper and saute’. Then add the mushrooms(drained). Cook for another 4 minutes, then add the can of chicken(drained). Heat through, then add the bow-tie pasta(cooked)! Add the italian garlic and herb creme and 1 cup of italian cheese. Mix well and serve with a salad and garlic bread.

When I cook this for a crowd, I will use chicken breast cut in chunks and increase the recipe to serve more people, but for me and my guy, it was a perfect portion, and it also went well with the t.v. show Big Brother…hahahahahaha!
