With fall setting in, I am ready for some soup………..I’m gonna try some beer cheese soup very soon!!  But til then, I just made a pizza for our family……and some peanut butter cookies for my granddaughter!!!  So, I will posting my many soup recipes on here soon!!  Peace Out!!

10 to 20 small brussel sprouts

shallots(chopped)

3 cloves garlic(sliced)

5 slices of bacon(chopped)

A few cherry tomatoes(optional)

Saute the bacon, remove from pan, then add shallots, cook for a minute, then add brussel sprouts, bacon back into the pan, saute for 4 minutes, then put garlic in, saute for another 4 minutes!  Add 1/2 cup chicken broth and simmer for 5 minutes until the broth has evaporated and add tomatoes and cook another minute, then Wa-La–Image serving time!!!

I came up with this recipe due to the fact that my garden was producing cherry tomatoes and cucumbers.  So here it is:

cherry tomatoes

2 cucumbers sliced thin

1 jalapeno sliced thin

rice wine vinegar(garlic flavored)

Put all ingredients in a bowl and add vinegar and salt and pepper,

The longer it sets, the more flavor it gets……and it has a little spice to it as well!!!!!!

3 cups all-purpose flour 4 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1/2 teaspoon cayenne (optional) 1 cup zucchini, coarsely shredded 3/4 cup sharp cheddar cheese, grated 1/4 cup chopped scallions, mostly white bits … 3 tablespoons fresh parsley, chopped 1 tablespoon fresh dill, chopped 2 large eggs 1 cup buttermilk 4 tablespoons (1/2 stick) butter, melted and cooled slightly 1 teaspoon paprika (optional)
 
 
DIRECTIONS
 
Preheat the oven to 350 F. Grease a 9 x 5-inch loaf pan. In a large bowl, whisk t
ogether flour, baking powder, baking soda, salt and cayenne (if using). Add shredded zucchini, scallions, dill, parsley and grated cheese. Toss to separate and coat with flour. In another bowl, whisk together eggs, buttermilk and melted butter. Add to the flour mixture and mix with a few light strokes just until the dry ingredients are moistened. Do not over mix; the batter should not be smooth. Sprinkle paprika, if using, over the loaf before inserting in the oven. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes. Let cool in the pan on a rack for 5 to 10 minutes before removing from the pan and setting to cool completely on the rack.Image

Sorry I have’nt been on here, it is just that I have been watching my grand baby and gardening!!  With a one year old, you know how they keep you on your toes……..And I love having her…..Serenity Cyan!Well, we have been riding the harley and the susuki!  Also having many parties in my backyard!  Last Saturday, my friend Mo grilled for us….her fresh herbed chicken which was delish, and also she made stuffed mushrooms which she made two different kinds—one with pesto and the other with a stuffing mixture!!  They were so good….melt in my mouth….good!  We all made sides in which i made a pasta salad and twice baked potato casserole, and others brought salads and dips and chips,,,,,,,,,,,,a gathering to remember!

I will get busy and post some of my recipes that I have been trying lately…until then have a lovely day…..Peace out!


Happy November, It has been awhile. Well the cold has hit here in Amarillo, and I made a chicken tortilla soup to get us through this cold day,and I will post that recipe in the future.

But, I did make this chicken roll up the other night with roasted green chlie gravy to dip it in…

I was just experimenting with the gravy and came up with this, and it actually is my favorite dipping gravy now.

I pounded the chicken to 1/4 inch thick and on top of that I put a whole pablano pepper (roasted) ! Then I added provolone-mozerella cheese on top of that and rolled them up and baked them in an oven at 350 degrees for about 40 minutes or until done.

In a skillet, I made the usual gravy with butter and added flour and then milk to thicken it! I had some roasted green chiles and chopped them up and added them to the gravy. I also added some sauted onions that I had sweated down to sweetness(YUM)! Let simmer for 10 minutes! Serven the chicken sliced with a bowl of gravy on the side and vegetable. Really turned out great!

PIZZA


At our house, we are always making pizza!! I really love the betty crocker pizza crust in the pouch,,,just add water and wa la, there it is!! So easy, and it bakes really well too!!

As you can see on this pizza, we really went wild with the onions….hahaha! But we just throw whatever we have in the fridge, such as mushrooms, sausage, jalapenos, cheeses!!
Anyway, just thought I would share one of our many pizzas with you!!

Good Friday to all! Well, the last few days have been in the 50’s and rain….something we haven’t seen around these parts in a while!! It was quite nice for a change….So I said on my last post, I was waiting for a time to make some soup, well I did it yesterday!! My son stopped by to do his laundry and could not leave the stove..hahaha!
Even if he is 29, he is still that little boy with the sack of crackers in one hand and a bowl of soup in the other!!! My ole man loved it as well, so here it is my version of chicken noodle soup!!

Ingredients:
2 large chicken breast
5 cups of water(give or take a few)
1 cup of chopped onion
1 cup of chopped carrots
1 can cream of celery soup
garlic powder
pepper
1 to 2 tablespoons chicken boullion
salt
1 bag of frozen mixed vegetables or fresh vegies from you garden!
1 bag of egg noodles

Instructions:
Place the chicken breast in a pan with 5 cups of water, add chopped carrots and onions! Add chicken boullion and garlic powder and salt and pepper!! Let boil and then simmer on medium until the chicken is done! Remove the chicken and shredd or cut into small pieces, then add back to the pot! At this time I add the mixed vegies, and let everything simmer for a good hour, so that the smell permiates throughout the house…leaving everyone to dream of that first spoonful of goodness!! Then I add 1/2 bag of wide egg noodles…because I had a huge bag at the time, but just eye it…you’ll know how much noodles you want……

Happy Monday to all….I thought I would share my hot chicken legs recipe with you, so here we go!!!
Can you say…SRIRACHA???

marinade:
1 cup of ketsup
1 cup of sriracha
1/2 cup of brown sugar
fresh grated ginger-bout 2 tablespoons
minced garlic-2 tablespoons
pepper1 tablespoon
squeeze about a 1/2 cup or more from the honey bear

whisk all ingredients, and add the legs…let set for at leaast 4 hours!

Preheat oven at 375. then bake for 40 minutes or until done.
I reserve some of the marinade before adding the legs for bastin
You can also get your grill on with these hot little items hee hee!
